Instructions

  • Prepare the Dough: In a large bowl, mix flour, sugar, yeast, and salt. In another bowl, combine lukewarm milk, melted butter, vegetable oil, and eggs. Mix wet and dry ingredients until a dough forms. Knead for 8-10 minutes until smooth and elastic.
  • First Rise: Place dough in a greased bowl, cover, and let it rise for about 1 hour, or until doubled in size.
  • Prepare Filling: Combine sugar and cinnamon. Toss raspberries in the mixture until well-coated.
  • Shape Rolls: Roll dough into a 12×18 inch rectangle. Spread raspberry mixture over dough, roll tightly, and cut into 12 equal slices.
  • Second Rise: Arrange rolls in a greased 9×13 inch pan. Let rise for 30 minutes.
  • Bake: Preheat oven to 375°F (190°C). Bake for 25 minutes or until golden brown.
  • Make the Glaze: Mix powdered sugar, lemon juice, lemon zest, and vanilla extract until smooth.
  • Glaze & Serve: Let rolls cool for 10 minutes before drizzling with glaze. Serve warm.

Notes

  • To use frozen raspberries, thaw and drain them first.
  • For a richer flavor, allow the dough to rise overnight in the fridge.
  • Store leftover rolls in an airtight container at room temperature for up to 2 days or refrigerate for up to 4 days.
