Description

This One-Pan Balsamic Chicken is a delicious, easy-to-make dish featuring juicy chicken breasts, a savory-sweet balsamic glaze, and a fresh tomato-mozzarella topping. Made in just one pan, this meal is perfect for busy weeknights yet elegant enough for a special occasion.

For the Balsamic Sauce:
  • 1/3 cup balsamic vinegar
  • 2 tablespoons honey
  • 2 tablespoons avocado or olive oil
  • 2 garlic cloves, minced
  • 1 teaspoon Italian seasoning
  • 1 tablespoon Dijon mustard
For the Tomato Mozzarella Topping:
  • 8 ounces grape tomatoes, halved
  • 8 ounces fresh mozzarella balls (ciliegine or pearls)
  • 2 tablespoons fresh basil, finely chopped
  • Kosher salt & fresh black pepper, to taste
For the Chicken:
  • 2 pounds boneless, skinless chicken breasts, pounded to even thickness
  • 2 tablespoons avocado oil (or other high-heat oil)
  • Kosher salt & fresh black pepper, to taste

Instructions

  • Prepare the Balsamic Sauce – Whisk together balsamic vinegar, honey, oil, garlic, Italian seasoning, and Dijon mustard. Set aside.
  • Make the Tomato Mozzarella Topping – Combine halved tomatoes, mozzarella balls, and basil in a bowl. Season with salt and pepper. Set aside.
  • Sear the Chicken – Heat oil in a large oven-safe skillet over medium-high heat. Season chicken with salt and pepper. Sear for 1-2 minutes per side until golden brown.
  • Add the Balsamic Sauce – Pour the sauce into the skillet, scraping up any browned bits.
  • Bake the Chicken – Transfer the skillet to a preheated oven at 400°F (200°C) and bake for 18-23 minutes until the chicken reaches an internal temperature of 165°F (75°C).
  • Top & Serve – Remove from the oven, top with the tomato-mozzarella mixture, and let rest for 5 minutes before serving.

Notes

  • If using chicken thighs, adjust cooking time and check for doneness after 25-30 minutes.
  • For extra balsamic flavor, marinate the chicken in the sauce for 30 minutes to 2 hours before cooking.
  • Serve with rice, pasta, mashed potatoes, or roasted vegetables for a complete meal.
