Ingredients

  • Graham Cracker Crust:

    • 2 cups graham cracker crumbs

    • ¼ cup sugar

    • 6 tbsp butter, melted

  • Key Lime Filling:

    • 2 (14 oz) cans sweetened condensed milk

    • ½ cup sour cream or full-fat Greek yogurt

    • ¾ cup fresh Key lime juice

    • 2 large egg yolks (optional)

    • Zest from 23 limes

  • Whipped Cream Topping (Optional):

    • 8 oz heavy whipping cream

    • 24 tbsp powdered sugar

    • 12 tsp vanilla extract


Instructions

  • Preheat oven to 350°F (175°C).

  • Mix graham cracker crumbs, sugar, and melted butter. Press into pie dish.

  • Bake crust for 6–8 minutes. Cool completely.

  • In a bowl, combine condensed milk, sour cream, lime juice, zest, and egg yolks (if using). Mix until smooth.

  • Pour filling into cooled crust.

  • Bake 15–20 minutes, until the center jiggles slightly. Cool 30 minutes.

  • Chill in fridge for 3+ hours or overnight.

  • Whip cream with sugar and vanilla until stiff peaks form. Top chilled pie. Garnish with lime zest or slices if desired.

  • Freeze slices for a quick treat later.

  • Greek yogurt is a great sub for sour cream.
