  • 150g Oreo cookies

  • 50g dairy-free butter or margarine

Cheesecake Filling:

  • 260g dairy-free whipping cream (e.g., Elmlea Plant Double)

  • 160g dairy-free cream cheese (e.g., Violife)

  • 8 Oreo cookies, crushed

Topping (optional):

  • 20g dairy-free whipping cream

  • 4 Oreo cookies, crushed

  • Extra Oreo halves for garnish


Instructions

  • Melt dairy-free butter over low heat and remove from heat.

  • Blend 150g Oreos into fine crumbs. Mix with melted butter until it resembles wet sand.

  • Press mixture into lined cupcake tins and freeze for 15 minutes.

  • Whip cream and cream cheese until thick and fluffy (about 5 minutes).

  • Fold in 8 crushed Oreos. Spoon or pipe over crusts.

  • Freeze for 4 hours or until fully set.

  • Whip remaining cream and pipe a swirl on each cheesecake.

  • Top with crushed Oreos and a halved Oreo for garnish.
