Ingredients

  • 2/3 cup (140 g) cottage cheese (full-fat or reduced-fat)

  • 6 large eggs (boiled)

  • 5–6 tbsp scallions, finely chopped

  • 2 tbsp mayonnaise (optional, for extra depth)

  • 1 1/2 tsp Dijon mustard

  • 1/3 tsp salt and pepper (to taste)

  • 1/3 tsp red pepper flakes (optional)


Instructions

  1. Boil Eggs: Place eggs in a pot of water, cover, and bring to a boil. Turn off heat and leave eggs covered for 7–8 minutes. Drain and transfer eggs to ice water for 2 minutes. Peel.

  2. Chop Eggs: Cut eggs in half. Remove yolks from 4 eggs and finely chop the remaining whole eggs and whites.

  3. Prepare Dressing: Mash egg yolks with 2 tbsp cottage cheese, mayonnaise, and mustard until smooth.

  4. Combine Ingredients: In a bowl, mix chopped eggs, remaining cottage cheese, scallions, dressing, salt, pepper, and red pepper flakes.
