  • 1 (12.5 oz) can chicken breast, drained (or 2 cups cooked chicken – rotisserie, grilled, etc.)
  • 2 cups frozen broccoli, thawed and cut into bite-sized pieces
  • 2 cups cooked rice (white or brown; Instant rice recommended for speed)
  • 1 (10.5 oz) can condensed cream of chicken soup
  • 1/2 cup sour cream
  • 2 cups shredded cheddar cheese
  • 2 cups crushed corn flakes (for topping)
  • 4 tbsp butter, melted
  • Salt, pepper, and garlic powder to taste

Instructions

  • Preheat oven to 350°F (175°C) and grease a 9×13-inch baking dish.
  • Prepare rice according to package instructions if not already cooked.
  • Drain canned chicken well or shred cooked chicken.
  • Thaw broccoli and cut into small pieces if necessary.
  • In a large bowl, combine chicken, broccoli, rice, cream of chicken soup, sour cream, cheese, salt, pepper, and garlic powder. Mix well.
  • Spread the mixture evenly in the prepared baking dish.
  • In a medium bowl, combine crushed corn flakes and melted butter. Stir until coated.
  • Sprinkle the buttered cornflakes evenly over the casserole.
  • Bake uncovered for 30–35 minutes, until heated through and golden brown.
  • Let it rest for 5 minutes before serving.
