- 2 cups frozen broccoli, thawed and cut into bite-sized pieces
- 2 cups cooked rice (white or brown; Instant rice recommended for speed)
- 1 (10.5 oz) can condensed cream of chicken soup
- 1/2 cup sour cream
- 2 cups shredded cheddar cheese
- 2 cups crushed corn flakes (for topping)
- 4 tbsp butter, melted
- Salt, pepper, and garlic powder to taste
Instructions
- Preheat oven to 350°F (175°C) and grease a 9×13-inch baking dish.
- Prepare rice according to package instructions if not already cooked.
- Drain canned chicken well or shred cooked chicken.
- Thaw broccoli and cut into small pieces if necessary.
- In a large bowl, combine chicken, broccoli, rice, cream of chicken soup, sour cream, cheese, salt, pepper, and garlic powder. Mix well.
- Spread the mixture evenly in the prepared baking dish.
- In a medium bowl, combine crushed corn flakes and melted butter. Stir until coated.
- Sprinkle the buttered cornflakes evenly over the casserole.
- Bake uncovered for 30–35 minutes, until heated through and golden brown.
- Let it rest for 5 minutes before serving.
