    • 1 small head of cauliflower, chopped into florets
    • ½ cup all-purpose or gluten-free flour
    • ½ cup water or unsweetened plant milk
    • 1 teaspoon garlic powder
    • ½ teaspoon paprika
    • ½ teaspoon salt
    • ½ cup buffalo sauce
  • For the Wraps:
    • 4 large tortillas (flour, whole wheat, or gluten-free)
    • 2 cups shredded lettuce or coleslaw mix
    • 1 small cucumber, thinly sliced
    • ½ red onion, thinly sliced
    • 1 avocado, sliced
    • ½ cup vegan ranch dressing or dairy-free yogurt

Instructions

  • Preheat the oven to 425°F (220°C) and line a baking sheet with parchment paper.
  • In a bowl, whisk together flour, water, garlic powder, paprika, and salt until smooth.
  • Coat cauliflower florets in the batter and shake off excess. Spread them on the baking sheet.
  • Bake for 20-25 minutes, flipping halfway through.
  • Remove from the oven and toss the cauliflower with buffalo sauce.
  • Bake for an additional 10 minutes for extra crispiness.
  • Warm the tortillas and spread vegan ranch dressing.
  • Add lettuce, cucumber, onion, and avocado. Top with buffalo cauliflower.
  • Fold the tortillas, roll them up, and serve immediately.
